Phasing out trans fats is a long, costly process

After the U.S. Food and Drug Administration announcement earlier this month that artificial trans fats would be banned within three years, the clock started ticking for companies still making trans fat-laden pies, popcorn, fries, frostings and other partially hydrogenated edibles. Much of the industry has already succeeded in removing trans fat while keeping the taste. The American Heart Association recommends less than 2 grams of trans fat per day in a 2,000-calorie diet. But right now, you can get a large order of fries from Popeye's Louisiana Kitchen in Chicago that will net you 3.5 grams of trans fat.
